• Outside the town of Ixcatlán, in Oaxaca, Mexico, a mezcalero travels to a remote valley to harvest Tobalá agave.  He'll return to his palenque and bake the piñas in an horno, ferment the baked piñas, and distill the tepache to produce mezcal.
